If you train for a marathon, you can eat anything you want -- Why? Because
(a) you'll burn all the calories you consume,
(b) you deserve it, and
(c) you'll be injured soon and back on a restricted diet anyway.

Green Pasta

 Here's what I did with my pasta dough!

Green Pasta:
1 Recipe Fresh Spinach Pasta noodles (see previous post)
1 cup Fresh Basil Pesto
Juice of one lemon
1 large zucchini, chopped
1/2 lb fresh fava beans, shelled
1/2 lb asparagus, chopped
1/2 cup fresh English Peas
1/2 cup Pea Shoots
Olive Oil
Salt and pepper
Parmesan cheese

Boil the noodles briefly, they will cook in about 3 minutes or less because they are fresh. Drain the noodles and toss with the pesto and lemon juice. Saute the zucchini, fava beans, asparagus, peas, and pea shoots with olive oil salt and pepper briefly over high heat. Add to the pasta noodles and pesto. Sprinkle with fresh basil and parmesan cheese! (Traer Joe's sells fresh english peas and edamame that you can use if you can't find them at your local farmer' market)
